County Waterford, the neighbouring counties and a little farther afield are rich in top quality food producers and we are very lucky to have them on our doorstep. Elda Wild Irish Venison Ltd was established by Jason Conway in 2012 and is a family run business. He is a native of Waterford and for many years has combined his passion for hunting with a deep respect for nature, its plants and wildlife. He now wants to share with others thespecial quality, flavour and taste of local Irish venison and other game meats.
All animals are sourced within a 60 mile radius of our unit in Waterford and have a fulltraceability system from field to fork, they are brought to our unit in Dunhill where they are then butchered, processed and packed on site. At present Elda Wild Irish Venison Ltd supply local Retailers, Restaurants and Hotels in Waterford and surrounding counties.

Michael and Dermot Walsh are brothers and Directors of M & D Bakery. They also happen to be the third generation of bakers in the Walsh family. Twenty seven years ago, they started theirvery own bakery in the heart of Waterford City, making breads and cakes for the catering and retail industry. Naturally, the Waterford Blaa is the centre of their repertoire.
The tradition of Baking the Waterford Blaa dates back to the arrival of the Huguenots in the 17th Century. At the time and throughout the medieval period, Waterford was a powerfultrading city for wares such as leather, wheat, flour, butter and other agricultural produce fromthe area around Waterford were shipped to and from England and the Continent mostly to Spain, France and Italy.

Sheridan’s Cheesemongers is run by its’ owners – Kevin Sheridan, Seamus Sheridan and Fiona Corbett. The company was founded in 1995, when brothers Seamus and Kevin started selling Irish farmhouse cheeses at the Galway market.
Shortly after we opened a shop in Galway with Irish farmhouse cheeses piled from floor to ceiling. Fiona joined in 1997 and Dublin markets and a shop on South Anne Street in the city centre were established that year. The Irish cheeses were quickly joined by their European cousins as well as a huge range of other artisan foodsincluding olive oils, cured meats, condiments and pasta sourced during travels in Europe.

It is a family business with a tradition of innovation and the highest horticultural practices. Grantstown Nurseries has supplied La Boheme Restaurant with a wide range of fresh fruit, tomatoes & vegetables for several years.
The main crop at Grantstown Nurseries is tomatoes. The fruits destined for our restaurant are picked ripe and delivered the same day. Varieties grown include Cheetah, a traditional round tomato, as well as the finest plum and cherry varieties which are picked brought to the consumer on the vine. Also grown at Grantstown are a fine range of lettuces from the traditional favourite butter head but also Lolo Rossa, Lolo Bionda and Oakleaf

Travel into the heart of West Waterford, along winding country roads and over stone bridges, turn left at an old thatched cottage, through lush greenfields and there you will find the Knockalara Cheese company.
The new custom-built cheese-making premises is in contrast to the rambling old farmhouse that is home to Agnes (pictured) & Wolfgang Schliebitz and their three daughters. Agnes & Wolfgang have been making specialty Sheep's cheese since 1990, milking their own flock of Friesland Sheep and turning their milk into a delicious range of critically-acclaimedhand-made cheeses. All cheese made at Knockalara Farmhouse Cheese Company are made by hand using traditional cheese making methods.
